Food Diary - Salvatore Cuomo Bros., Tokyo
After a day autumn-viewing at Todai and Rikugien, Hubby and I were pretty tired, and decided to stick to somewhere close to our hotel for dinner. So, we decided to go to XEX Tokyo again. Hubby wanted to eat yakiniku at Teppenyaki An (which we have been before). But at the last second, we decided to check out the Italian restaurant Salvatore Cuomos Bros. instead. Salvatore Cuomo Bros. is one of the many Italian restaurants owned by Salvatore Shigeta, an Italian celebrity chef and restaurateur in Japan, the man credited with popularising the Neopolitan pizza in Japan.
Antipasto: Caprese of Parma proscuitto & Japanese pear, spice crumble |
Primo: Fedelini aglio olio with halfbeak, yuzu flavour, wrapped in Shogoin turnip |
The primo was quite heavy on the salt, but otherwise quite well prepared. So, the needlebeak (sayori) has a soft texture when cooked, but I think I prefer it sushi style...
Secondo: Grilled wagyu fillet with Ruby port wine sauce |
Hubby's choice for his secondo was the wagyu fillet. He was a little grumpy that the portion was small, but he did say the flavours were good.
Secondo: Grilled beef sirloin with Barolo vinegar sauce |
My secondo was the grilled sirloin, the plate drizzled with the Barolo vinegar reduction and covered with shaved Parmesan cheese and fresh rocket. Nothing wildly unfamiliar really, since Barolo vinegar is great for meats and deglazing. Barolo vinegar is an aged red wine vinegar made from the DOCG Vino Barolo, a red wine produced in Piedmont, Italy and made from Nebbiolo grapes. (Same region that produces my favourite bubbly, the Moscato d'Asti and Asti Spumante. Sigh, I now crave doing a winery tour in Italy.)
